Lemon Bread

This is far from our cookie recipes but it is one of my daughters favorite breads that grandma used to make. She was missing her today so she decided to try her hand at it and see if she could duplicate the taste. Her grandma would be so very proud of her! The results were a delicious warm dessert on this cold wintry day. It was a great way to spend our last moments together before they go back to school tomorrow. I love hearing her baking in the kitchen and watching her dance to her music. The years go by too fast!

Ingredients:

  • 1 cup sugar
  • 5 tablespoons butter
  • 2 eggs
  • Grated peel and juice of one lemon *or 2 teaspoons bottle lemon
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 cup fine chopped nuts *optional

Instructions:

  • Cream butter and sugar
  • Beat in the eggs
  • Add milk and mix well
  • Combine flour, salt and baking powder
  • Add dry mixture into the batter
  • Stir until smooth
  • Stir in lemon and nuts
Warm out of the oven!

Glaze

  • Lemon juice and 1/2 cup sugar
  • Heat in pan over low heat
  • Spoon glaze onto warm bread

Bake at 325 degrees for one hour or less.

If you want to make some up ahead of time this bread freezes well.

Mom’s Sugar Cookies

Mom’s Sugar Cookies
  •  1 1/2 cup shortening
  • 1 1/2 cup sugar
  • 1 teaspoon grated orange peel
  • 1 teaspoon vanilla
  • 2 eggs
  • 8 teaspoons milk
  • 4 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions:

  • Combine shortening, sugar, orange peel & vanilla: then add the eggs.
  • Beat until light and fluffy.
  • Stir in the milk.
  • Shift together dry ingredients.
  • Blend with creamed mixture.
  • Divide dough in half and form two balls.
  • Chill for one hour.
  • Roll and Cut Out.
  • Bake at 375 for 6 – 8 minutes on an ungreased cookie sheet.

Christmas Cinnamon Rolls

Christmas Cinnamon Rolls
  • Combine 1 pkg of yeast, 2 tablespoons of sugar, 2 cups lukewarm water and 1 1/2 cup of flour together.
  • Cover and raise until bubbly.
  • Cream 3/4 cup sugar, 1 1/2 cup shortening, 1 or 2 eggs, 1 teaspoon salt together. Add to the first mixture then add 2 cups of flour.
  • Cover and raise until double in size.
  • Add enough flour to handle – knead.
  • Roll dough out oblong.
  • Cover with butter.
  • Sprinkle with cinnamon and sugar. **add nuts and raisins if you like
  • Roll, slice and place in a greased pan.
  • Raise for a half hour.
  • Bake at 425 degrees for about 8 minutes.
